South African Republic

Population of South Africa has been drinking for centuries a drink from the red bush Rooibos, which grows in the Western Cape province of South Africa. In 1903, this drink was sold by the Russian tea merchant Benjamin Ginsberg under the name "Mountain Tea". At the beginning of the 20th century, Rooibos began to be grown on plantations and processed similarly to a real tea.

The Growth of Tea

Tea is prepared from the leaves of some species of bush of the genus Camellia. It is an evergreen shrub or tree that grows to a height of 15 meters in nature. However, it is maintained on plantations only up to a height of one meter. As a result, tea leaves are harvested more comfortably and the harvest is larger. It is harvested several times per year, in tropical areas up to 30 times per year. The tea plant thrives mainly at higher altitudes - there is a smaller harvest, but the tea has much better quality. The tea plant is grown in one place for 40 to 100 years and the first leaves can be harvested 5 years after planting. Harvests are still done manually, with a few exceptions.

Tea processing

After harvest, tea leaves are processed in various ways, which lead to different "types" of tea. The basic factor is the degree of oxidation (usually the chemically incorrect name of fermentation is used). Traditional division into four basic groups of teas:

Black Teas

BLACK TEAS

The leaves are mechanically disrupted, the oxidation is allowed to proceed completely. Processing takes a week or more. There is a very significant difference between orthodox processing and fully industrial production by the CTC method (Crush, Tear, Curl), which creates a crushed substrate suitable for tea bags.

Semi-green Teas

Semi-green Teas

They are oolongs, teal, yellow-green, or even blue teas. During processing, their leaves undergo shorter oxidation.

Green Teas

GREEN TEAS

The enzymes that cause oxidation are destroyed by heat during the processing of these teas. Drying in pans or steaming is used for this.

According to the legend, it happened thanks to the progressive emperor Shen-Nung. During his reign, it was ordered to boil all water for hygienic reasons. In the Mandarin and Cantonese dialects, tea is pronounced as „ccha“. In the Min dialect of the important port of Sian-men, the word „te“ is used to describe tea - hence the name in English, German and other languages.
